I'm using "Flawless Widescreen", and "Elden Ring Mod Loader", and "Mod Engine 2" to load various mods. The first to get widescreen at all (and it does a few other things as well), the second for no startup logo screens and unlocked fps, and the third for extending the UI to widescreen (the first only removes the black bars).

Thank you for sharing this! For those who used flawless widescreen fix before patch 1.02.1 came out - make sure you disable EAC again by renaming the file and do so with each update. Elden Ring updates restore .exe files to their default state so you could end up being banned if you forget to do it.
