The Grimm Troupe DLC doesn't count towards 112%. You can fight NKG in godhome either way, even during banishment. You can still do PoH without ever fighting NKG. But you'd need to do 2 save files for both, because you get an achievement for both. Though I'd recommend banishment if you want the better charm. 1.
